Sweetcorn & Lentil Fritters

These sweetcorn and lentil fritters are perfect for the whole family – including babies. This sort of food is brilliant if you’re following baby led weaning, as it’s easy for little hands to pick up. I’d recommend not giving it to babies under 10 months of age as sweetcorn can be a bit difficult for young ones to chew.

Serves 4


1 medium/large can sweetcorn

1 pack puy lentils

2 eggs

80g flour

1 tsp cumin

1 tsp parsley

1 small handful of cheese

Sprinkle of pepper

1 small pot of natural yogurt

Juice of 1 lemon

3 Tomatoes

Chilli powder (do not use this on babies portion – you don’t want to be dealing with explosive nappies at midnight).

1 Bag Kale

3 Tbsp vegetable oil

Serve with a potato salad or chunky baguette


Mix the sweetcorn, lentils, cumin, parsley, eggs & flour in large mixing bowl.

Add 2 Tbsp of the oil to a large frying pan and gently heat.

Now scoop out a large heaped tablespoon of the mixture (you might need just a little more) and add to the pan. Press down into a flat circle shape. Continue the same with the rest of the mixture. Leave enough room to push the fritters down as you cook them. Fry for 2-3 mins on each side.

Meanwhile, slice the tomatoes into thin circles.

Now add the last Tbsp of oil to another frying pan. Wash the kale and then add to the frying pan. Cook for 4 mins.

Once the fritters are cooked, place them on a piece of kitchen towel to absorb any excess oil.

Add the cooked kale to each plate. Now add the fritters. Top with slices of tomato, a dollop of natural yogurt, a good squeeze of lemon juice and a sprinkle of chilli and pepper.

For little ones, make sure they’re cool before serving and slice into strips.
